Nyfikenheten i varför vissa druvsorter beter sig olika beroende på vilka förhållanden dom växer i, vilken jordmån det är och vilka vindar som blåser, väckte intresset att göra vin hos Jean-Philippe Padié. Uppväxt i Bourgogne men med farföräldrar i sydvästra Frankrike var anledningen till hans flytt söderut.
Han lärde sig göra vin hos Gerard Gauby och idag har han drygt tio hektar med ett antal olika druvor planterade. Arbetet i vingården och vineriet är minimalistiskt och sker med så lite handpåläggning som möjligt.

However, one is still missing! Taste.
I’m quite attracted by the idea of tasting the earth or rock. But it’s still necessary to find a link between these elements; the sky, the earth and our senses. Why not ask this shrivelled and tortured-looking rootstock? It’s been here for so long it gives the impression of digging its long roots down into the heart of the rock.”
